Ingredients
  • 3 large peaches
  • 1/4 cup (1/2 stick) butter
  • 1/2 cup firmly packed brown sugar
  • 1 1/2 cups sifted cake flour
  • 3/4 cup granulated sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/3 cup vegetable shortening
  • 2/3 cup milk
  • 1/2 tsp. vanilla
  • 2 eggs

Instructions

  1. Slice and peel peaches.  
  2. Melt butter in a 9x9x2 baking pan in a moderate oven. (350 degrees)  
  3. Remove from oven; sprinkle brown sugar evenly in pan.  
  4. Arrange peach slices in row over sugar.  
  5. Sift flour, sugar, baking powder and salt into large bowl.  
  6. Add shortening, milk,vanilla and eggs.  
  7. Beat with electric mixer at low speed until mixed. Beat at high speed for 4 mins. or until very smooth and fluffy.  
  8. Spoon over peaches covering completely.  
  9. Bake in a moderate oven (350 degrees) fro 45 min. or until center springs back when pressed with fingers.  
  10. Loosen cake from edges with a knife, invert and shake gently while lifting off pan.
