Ingredients

  • 3 medium sized tart apples
  • 1 cup apple cider
  • 1/3 cup butter
  • 1 cup packed brown sugar
  • 1 package spice cake mix
  • halved maraschino cherries
  • 1/2 cup chopped walnuts

Instructions

  • Pare and core apples; slice thin.  
  • Simmer in apple cider about 5 minutes or until just tender.  
  • Drain, reserving apple cider.  
  • Combine 2 Tbls. hot cider, butter and brown sugar in 13” x 9” x 2” pan.  
  • Set in 350 degree oven for 5 minutes; then remove from oven.  
  • Prepare cake mix substituting apple cider for water.  
  • Arrange apple slices and cherry halves attractively in brown sugar mixture in pan.  
  • Sprinkle with walnuts.  Pour batter into pan.  
  • Bake at 350 degrees for 55 to 60 minutes.  
  • Remove from oven and invert; let stand for one minute; remove pan. 
  • Serve warm with topping.

Topping:

  • 1 cup heavy cream
  • 1/4 cup confectioners’ sugar
  • 1 tsp vanilla extract
  • 1/4 cup sliced almonds

Whip heavy cream until almost stiff, then add sugar and vanilla and
beat until stiff.  Place in serving bowl and sprinkle with almonds.
