Ingredients
- 3 medium sized tart apples
- 1 cup apple cider
- 1/3 cup butter
- 1 cup packed brown sugar
- 1 package spice cake mix
- halved maraschino cherries
- 1/2 cup chopped walnuts
Instructions
- Pare and core apples; slice thin.
- Simmer in apple cider about 5 minutes or until just tender.
- Drain, reserving apple cider.
- Combine 2 Tbls. hot cider, butter and brown sugar in 13” x 9” x 2” pan.
- Set in 350 degree oven for 5 minutes; then remove from oven.
- Prepare cake mix substituting apple cider for water.
- Arrange apple slices and cherry halves attractively in brown sugar mixture in pan.
- Sprinkle with walnuts. Pour batter into pan.
- Bake at 350 degrees for 55 to 60 minutes.
- Remove from oven and invert; let stand for one minute; remove pan.
- Serve warm with topping.
Topping:
- 1 cup heavy cream
- 1/4 cup confectioners’ sugar
- 1 tsp vanilla extract
- 1/4 cup sliced almonds
Whip heavy cream until almost stiff, then add sugar and vanilla and
beat until stiff. Place in serving bowl and sprinkle with almonds.
