Ingredients
- 1 large McIntosh apple
- 1 tsp. baking powder
- 6 Tbsp. unsalted butter
- 1/4 tsp. salt
- 1 1/2 cup unbleached flour
- 1 large egg
- 1/2 cup milk
- 3/4 cup maple syrup
Instructions
- Preheat oven to 350 degrees, adjust rack to lowest position.
- Butter an 8 inch cake or spring form pan.
- Line the bottom with a parchment or foil.
- Butter top of parchment and dust with flour, tapping out any extra flour.
- Peel and core the apples. Cut in half and into 1/2 inch pieces.
- Melt 2 Tbsp. butter in a saucepan.
- Add apples and saute until tender. Drain and set aside.
- Beat remaining butter until smooth and light in color. Slowly beat in the egg and maple syrup. Sift the flour, baking powder and salt together.
- Add alternately with the milk. Fold in the apples and spoon into the pan. Bake for 50 minutes or until a tooth pick pulls clean from the center.
- Cool in the pan for 10 minutes. Turn out onto a rack and cool for 30 minutes.
- Slice additional apples and fan around the top edge.
- Whip some cream and mound in the center before serving.
