Ingredients

  • 1 large McIntosh apple
  • 1 tsp. baking powder
  • 6 Tbsp.  unsalted butter
  • 1/4 tsp. salt
  • 1 1/2 cup unbleached flour
  • 1 large egg
  • 1/2 cup milk
  • 3/4 cup maple syrup

Instructions

  • Preheat oven to 350 degrees, adjust rack to lowest position.
  • Butter an 8 inch cake or spring form pan.
  • Line the bottom with a parchment or foil.
  • Butter top of parchment  and dust with flour, tapping out any extra flour.
  • Peel and core the apples. Cut in half and into 1/2 inch pieces.
  • Melt 2 Tbsp. butter in a saucepan.
  • Add apples and saute until tender.  Drain and set aside.
  • Beat remaining butter until smooth and light in color.  Slowly beat in the egg and maple syrup. Sift the flour, baking powder and salt together.
  • Add alternately with the milk.  Fold in the apples and spoon into the pan.  Bake for 50 minutes or until a tooth pick pulls clean from the center.
  • Cool in the pan for 10 minutes.  Turn out onto a rack and cool for 30 minutes.
  • Slice additional apples and fan around the top edge.
  • Whip some cream and mound in the center before serving.
