Szechuan Stir Fry Beef with Orange

2 lbs. top round steak
4 Tbs. olive oil (or Orange Oil that is sold in the Farm Stand!)
1 orange
5 cloves of garlic, diced
3 tsps. of dry red pepper
1/2 cup of corn starch
1 cup of sherry
1 cup of soy sauce
2 Tbs. of a spicy Szechuan or Terriyaki sauce
3 heads of broccoli, cut into florets
6 scallions, chopped
2 Tbs. of sugar or Splenda

Cut steak into thin inch strips.  Roll steak in corn starch.  Set aside.  
With a vegetable peeler, scrape orange skin into small pieces and
place in small bowl.  To the orange rind, add chopped garlic and red
pepper.  Cut up broccoli and scallions.   Heat small amount of
olive/orange oil in a large frying pan and add the meat, garlic, red
pepper and orange rind.  Brown on all sides of meat, adding oil when
necessary.   Remove mixture to a bowl.  Add more oil and saute the
scallions for one minute.  Add the broccoli.  Cook until tender but not
too soft, adding oil as needed to coat the pan.  Finally, add the cup of
soy sauce, sherry, spicy sauce, and sugar.  Let saute for a couple of
minutes. Add the meat mixture back into the pan.    Serve with
cooked white rice.
