Blueberry Maple Syrup

2 cups frozen or fresh blueberries
3/4 cup maple syrup
1 teaspoon grated orange peel
1 tablespoon cornstarch
½ tsp vanilla
½ tsp cinnamon

In a small saucepan combine blueberries, maple
syrup and orange peel. In a small cup dissolve
cornstarch in 2 tablespoons water; add to blueberry
mixture. Cook, stirring constantly, until mixture
boils; reduce heat and simmer until mixture thickens,
about 1 minute. When thickened add ½ tsp vanilla
and ½ tsp cinnamon. Serve warm over pancakes,
French toast and waffles.

Yield: about 2 cups
